
Oh Avocado! I could eat you every day! Avocados rank close to #1 on my favorite superfoods list! And how lucky am I to live in a place where they grow abundantly?! I even have my own avocado tree!
Avocados are referred to locally as ‘pears’ because the tropical variety that we have here in the US Virgin Islands is shaped somewhat like a pear and tends to grow very large. My tree has produced quite a plentiful crop this year, and along with the numerous gifts that clients and friends have been sharing with me, my kitchen is now overflowing with avocados! I am in heaven!
Eating an avocado daily can provide numerous health benefits. They have more potassium than bananas and are loaded with good for you unsaturated fat and fiber. Many people report clearer skin and healthier hair when eating avocados on a regular basis and avos are common in beauty products like face masks and hair conditioners.

While I’m happy splitting an avocado in half, drizzling it with fresh lime juice, salt, and pepper and eating it just like that (add a splash of hot sauce for a truly Caribbean experience! YUM!), I’ve gotten creative with my recipes over the years and am creating all kinds of desserts, side dishes, and snacks with this nutritious and delicious treat!

My avocado hummus recipe below will be sure to convert you to a fan of this fruit if you’re not already! Serve it on gluten-free toast garnished with sprouts and greens for a hearty breakfast or cut up some fresh carrots and celery for dipping in at snack time. It’s easy, it’s healthy, and it’s green! Cruzan Avocado Hummus
Combine all ingredients in a high speed blender or food processor and mix until smooth.
