
2 cups flour (Bob's All Purpose Baking Flour and/or Gluten Free works well)
1 cup sugar
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1.50 cups coconut milk
⅓ cup unsweetened applesauce
1 tsp vanilla
½ cup dried unsweetened flaked coconut

Preheat oven to 400 degrees

Sift together the dry ingredients in a bowl.

Add the coconut.

Combine the wet ingredients in a separate bowl and then mix into the dry. Do not overmix!

Fill lined muffin tins with batter and bake for 20 minutes at 400 degrees!
